Own Noe Khao Swe

“Own noe khao swe”, literally known as noodle with coconut milk is one of the local favorite dishes in Myanmar. This delicious dish with braised chicken drumstick in coconut milk is popular for its creamy soup and crunchy toppings. People in Myanmar usually make this dish on the weekend to share with their loved ones.

To make this famous dish you will need the following: 

Dry Ingredients:
2 tbs of cumin
2 tbs of paprika
3 tbs of curry powder
2 tbs chicken stock
chilli powder (optional)
1/2 cup of yellow curry paste 
1 can of coconut milk
3 tbs of fish sauce 
1 tbs of salt 
1 tbs of sugar 
1/2 cup sunflower oil 
4 cups water
10 dumpling wraps 

Fresh Ingredients:
Egg noodles (or lo mein)
Chicken drumsticks (10)
Cilantro (coriander)
Spring onion
Lime/lemon
Onion

Instructions:
In a saucepan add oil and when it gets hot, add curry paste, paprika, curry powder, chili powder fry them together for 3 mins then add coconut milk, little by little while stirring. Keep an eye on it as the curry can burn. Turn the heat to medium high and dd chicken to the pan, fry for 5-7 mins, then add fish sauce, salt, chicken stock then add the rest of the coconut milk, water. Cover and cook for 30 mins in a low heat. While the curry is cooking, let’s prepare the noodle!

In a pot boil 3 cups of water, bring it to boil and add the noodle (cook according to the instruction). After the noodle is cooked, soak it in cold water then drained the water. Put some oil to it and mix well (so it won’t stick).

Let’s prepare topping! Cut dumpling wraps in to strips. In a frying pan, add oil, let it sit for 4 mins then add dumpling wraps and deep fry for 3 mins (pay attention as it can burn very quickly)

To prepare a dish: place noodle in a bowl, add curry, top with crunchy dumpling strips, garnish with fresh cilantro and spring onion. You can also add chili powder, fresh onion and more fish sauce. Serve immediately! Bon Appetite!
